Our famous Gluten Free Carrot Cake……the recipe!

This week we are revealing our amazing carrot cake recipe. The cake is very popular, made from lots of lovely ingredients and is Gluten Free for the celiac’s out there!

This recipe makes a 10″ round cake

Ingredients

For the cake:

1/2 a cup of Ground almonds

2 cups of Gluten free self raising flour

1.5 tspn Bicarb

1 tspn Baking powder

1 tspn Salt

2.5 tspn Cinnamon

1/2 cup of Chopped dates

1/2 cup of desiccated coconut

3.5 cups of grated carrots

2 tspn Vanilla Extract

4 Eggs

1.5 cups of Vegetable oil

2 cups of Brown sugar

Icing: 

1 cup of Cream cheese

2 cups of icing sugar

1 tspn of Orange blossom water

Zest of an orange

Method: 

Mix all dry ingredients together in a bowl. Mix all wet ingredients together in another bowl and combine together, mixing thoroughly. Stir through the grated carrot and pour mixture into your 10″ round cake tin (either heavily greased or with baking paper to avoid cake sticking.)

Bake the cake in a pre heated oven at 160c for 40 – 45 mins
